Recipe ------- Keto Strawberry, Almond and Chocolate Muffin

1/4 cup coconut flour
3 tsps baking powder
2 cups almond meal
1/4 cup powdered stevia sweetener
250g stawberries, hulled and chopped
75g dark chocolate, chopped
3 eggs lightly whisked
2 tsps vanilla extract
1/4 cup almond milk
125g unsalted butter, melted

Step 1

Preheat over to 170c or 150c for fan forced ovens.  Place 12 muffin patties into a 1/3 cup capacity muffin pan.

Step 2

Sift the coconut flour and baking powder together into a large bowl.  Add the almond meal, stevia, strawberries and chopped chocolate, then stir to combine.

Step 3

Whisk the eggs, vanilla and almond milk together in a jug.  Add the egg mixture and melted butter to the dry ingredients and stir until just combined.

Step 4

Divide the mixture among the prepared muffin cases and bake for 20 - 25 minutes or until golden, and when a skewer is inserted into the centre, it comes out clean.  Set aside for 5 minutes to cool, before transferring to a wire rack to cool completely.
